SAUSAGE KALE SOUP

We moved to London recently cus I’m going to grad school, YAYYY!

And the weather is awful everything. Constant freezing drizzle.

Never thought I would miss literally freezing, snowpocalypse Finland, but here we are in London missing Finland.

Anyways, this sausage kale soup is a winter staple in our house. Warm, heavy and so good like a warm hug.

Also, we got 2 Le Creuset pots for like 15 Pounds on GumTree!!! Yayyyy!!!

INGREDIENTS

  • Olive Oil

  • Italian Sausage (about 4 links/5 links)

  • Garlic (5 cloves)

  • Onion (1)

  • Carrots (3)

  • Kale (1 Head)

  • Potato (3)

  • 2 Tablespoons of Red Chili Powder (Adjust to taste. You do you but I love spice)

  • Salt/ Pepper

INSTRUCTIONS

  • Heat olive oil in dutch oven

  • Throw in garlic and onion and red chili powder. Sizzle, Sautee

  • Take sausage out of casing and sautee in hot oil

  • Feed casing to dog

  • When the meat is about 70% cooked, throw in carrots, potatoes, kale, and fill with enough water to cover everything

  • Cover and let it simmer for 30 mins

  • Season to taste with salt and pepper
