SWEET POTATO FRENCH FRIES

Sweet Potato French Fries are 30% Peeling and 30% Waiting and 40% Pure Joy. They’re sooooo good and when I’m like craving fatty junk food in the middle of the afternoon, they’re not a perfect substitute for appetizers from Buffalo Wild Wings, but they’re pretty good. I eyeballed the recipe from Gimme Some Oven and ate them dipped in Spicy Mayo. (Also, I know my dog looks all snarly, but he was in the middle of catching a treat. He’s the sweetest baby pumpkin.)

INGREDIENTS

  1. Sweet Potatoes

  2. Olive Oil

  3. Salt/ Pepper

  4. Cornstarch

  5. Mayo/ Sriracha

INSTRUCTIONS

  1. I grabbed 5 sweet potatoes and it made 2 whole trays. I prefer long and slender > round and fat sweet potatoes.

  2. I cut them into into even long rectangles, like pinky size. Mine were a little bit big, and I’d go smaller next time.

  3. Soak them in water overnight. Do this for sweet or regular potatoes for extra crispiness.

  4. Preheat the oven to 220C / 430F

  5. I take them out, pat them dry with paper towels and toss with olive oil and cornstarch. Cornstarch helps it get crispy as opposed to soggy. If you like soggy, you can forego the cornstarch. Also, I don’t season until they come out of the oven. Salt draws out moisture also adding to the soggy factor.

  6. Put down parchment paper on the baking tray and then place the tossed sweet potatoes on the parchment paper.

  7. Bake for 35 minutes. Season with salt and pepper.

  8. Take mayo (I like vegan mayo) and sriracha or really any spicy condiment you like and mix. Bam! You have Spicy Aioli.

  9. Try not to eat them all before your husband gets home.
