TACOS - PICKLED JALAPENOS
PICKLES
They’re delicious so there’s that, but they really do wonders when eating something as fatty as pork belly tacos. They help balance everything out, and I even love them in a breakfast burrito. And you can pickle anything, so if you want to make it more mild, pickle onions and carrots with like 1 or even no jalapenos. You do you.
JAMMY PICKLED JALAPENOS INGREDIENTS
3 onions, quartered
6 garlic cloves
6 jalapenos
150 g vinegar
100 g water
salt, pepper
PICKLED JALAPENOS INSTRUCTIONS
Toast the onions, garlic and jalapenos in a dry saucepan. Season with salt and pepper
When they start to soften and smell like heaven, add the vinegar and water
Let it simmer until everything gets soft, but not mushy. Like 5 minutes
Season with more salt and papper to taste
Let it cool and then put everything into glass jars
