TACOS - PICKLED JALAPENOS

PICKLES

They’re delicious so there’s that, but they really do wonders when eating something as fatty as pork belly tacos. They help balance everything out, and I even love them in a breakfast burrito. And you can pickle anything, so if you want to make it more mild, pickle onions and carrots with like 1 or even no jalapenos. You do you.

JAMMY PICKLED JALAPENOS INGREDIENTS

  • 3 onions, quartered

  • 6 garlic cloves

  • 6 jalapenos

  • 150 g vinegar

  • 100 g water

  • salt, pepper

PICKLED JALAPENOS INSTRUCTIONS

  • Toast the onions, garlic and jalapenos in a dry saucepan. Season with salt and pepper

  • When they start to soften and smell like heaven, add the vinegar and water

  • Let it simmer until everything gets soft, but not mushy. Like 5 minutes

  • Season with more salt and papper to taste

  • Let it cool and then put everything into glass jars
