TACOS - SALSA
SALSA
I don’t have any good Mexican grocery stores near me nor do I have any of my equipment like a blender or food processor so this is a really easy, basic “salsa”. It’s a good no-equipment salsa.
It’s nothing fancy, but it’s good and the only thing we needed to get was cilantro which is a win because we’re trying to leave the house as little as possible.
SALSA INGREDIENTS
3 onions (We will cook 1 and add 2 raw)
5 cloves of garlic
2 Jalapenos (I like things spicy)
Handful of crushed red chili peppers
2 generous pinches of cumin
1 can of tomatoes
A little bit of olive oil
1 lime
Head of cilantro
Salt/ Pepper
SALSA INSTRUCTIONS
Heat up a sauce pan with olive oil
Toss in garlic, handful of crushed chili peppers, 1 diced onion, cumin. Stir
When everything is aromatic, pour in 1 can of crushed tomatoes
Add salt, pepper
Simmer for 30 minutes
Dice the 2 remaining onions and put them in a bowl
Add diced jalapenos to the raw onions
Add the jammy cooked tomato mix to the raw jalapenos and onions and stir
Add a big bunch of chopped cilantro
Squeeze 1 lime over it all
