SALSA

I don’t have any good Mexican grocery stores near me nor do I have any of my equipment like a blender or food processor so this is a really easy, basic “salsa”. It’s a good no-equipment salsa.

It’s nothing fancy, but it’s good and the only thing we needed to get was cilantro which is a win because we’re trying to leave the house as little as possible.

SALSA INGREDIENTS

  • 3 onions (We will cook 1 and add 2 raw)

  • 5 cloves of garlic

  • 2 Jalapenos (I like things spicy)

  • Handful of crushed red chili peppers

  • 2 generous pinches of cumin

  • 1 can of tomatoes

  • A little bit of olive oil

  • 1 lime

  • Head of cilantro

  • Salt/ Pepper

SALSA INSTRUCTIONS

  • Heat up a sauce pan with olive oil

  • Toss in garlic, handful of crushed chili peppers, 1 diced onion, cumin. Stir

  • When everything is aromatic, pour in 1 can of crushed tomatoes

  • Add salt, pepper

  • Simmer for 30 minutes

  • Dice the 2 remaining onions and put them in a bowl

  • Add diced jalapenos to the raw onions

  • Add the jammy cooked tomato mix to the raw jalapenos and onions and stir

  • Add a big bunch of chopped cilantro

  • Squeeze 1 lime over it all
