TORTILLA
I’m making flour tortillas. Although, most authentic tacos are served on corn tortillas, I learned from the Netflix show “Taco Chronicles” that there are Sonora style tacos that are served on flour tortillas! I’m not saying these are super authentic or anything, just that they’re delicious, stretchy, salty. All the good things.
If your pork belly from yesterday gave you a lot of fat, fantastic. If not, no worries.
TORTILLA INGREDIENTS
350 g flour
100 g fat (fat from pork belly or vegetable oil is great too)
170 g boiling water
Ratio is roughly 3 (flour) :2 (water) :1 (fat)
Pinch of salt (if you’re using rendered pork fat, it might be heavily salted already from the brine so keep that in mind)
Pinch of baking soda
TORTILLA INSTRUCTIONS
Mix everything together with a heat proof spatula or wooden spoon at first cus boiling water is hot
The texture is almost like a warm playdough
This recipe makes plenty for 4 people so I cut this in half and wrap 1 dough in plastic wrap and put it in the fridge.
Let the remainder dough rest for an hour, covered in plastic or an upside down bowl on the counter
Come back and piece out 15 g balls . As thin as possible.
Roll out and cook over a hot, dry pan
